This is more a Windows question then a VMware question but its easy to copy the data over to the new OS.
Its not as easy with the applications, its usually not possible just "to move" them to the new OS unless its a very simple application with very few files, also not all applications works with Windows 7.
I would recommend copy your important data (using a USB disk or similar) and reinstall the applications.
