In OS X Ethernet Network System Preferences set the IP Address to DHCP using manual address and assign a 169.254.x.x/16 IP Address.
Or, better yet, change Configure IPv4 to Off. I've successfully used this method in the past for attaching a host Ethernet interface directly and (almost-)exclusively to a VM.
