I agree with this.
However, while you are discussing "one LUN != one array", I would standby that "one LUN = one datastore".
There is no physical world equivalent of the datastore, noone ever ran multiple servers off single LUNs.
Regarding the size of the discussed Exchange server, it's very small. For example, noone has ever questioned performance on a server we have here suppoted > 800 users on a single LUN (same hardware in fact)
We have other LUNs running on other active controllers to run other servers so the load is still distributed.
